Apple Strudel Muffins

2 cups all purpose flower 1 teaspoon baking powder
1/2 teaspoon baking soda 1/2 teaspoon salt
1/2 cup butter 1 cup white sugar
2 eggs 1 1/4 teaspoon vanilla
1 1/2 teaspoon cups chopped apples
1/3 cup packed brown sugar
1 tablespoon all purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
1. Pre-heat oven to 375 degrees F. Grease a 12 cup muffin pan.
2. In a medium bowl, mix flour, baking powder, baking soda and salt.
3. In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin
pan.
4. In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse bread crumbs. Sprinkle over tops of mixture in muffin pan.
5. Bake 20 minutes in pre-heated oven. or until a tooth pick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on wire rack.

Spiced Apple Cookies

½ cup Trans-fat free shortening
1 1/3 cup dark brown sugar
1 egg
¼ cup whole milk
2 ¼ cup all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
½ tsp ground cloves
½ tsp ground nutmeg
½ tsp salt
1 cup chopped walnuts (optional)
1 cup unpeeled apple, finely chopped (I use a juicy, sweet variety like McIntosh)
Instructions:
1. Preheat oven to 350.
2. Beat together shortening and brown sugar until full combined. Add egg and milk and mix ingredients well.
3. In a separate bowl combine flour, baking soda, cinnamon, cloves, nutmeg and salt. With the mixer on low, slowly add dry ingredients, scraping down the sides as necessary, until everything is fully combined.
4. Stir chopped apple and walnuts into the batter with a wooden spoon.
5. Drop cookies by rounded teaspoonfuls about 2-inches apart on a cookie sheet lined with Silpat or parchment paper. Press the tops of the cookie down with your top two fingers so they are slightly flattened.
6. Bake for 12-14 minutes or until cookies hold their shape and are slightly browned on the edges.

Streusel Topping:
1/4 c. sugar
2 tbsp. flour
1 tbsp. butter
1/2 tsp. cinnamon
Sift flour, measure and resift with baking powder, sugar, salt and cinnamon. Beat egg, milk and oil; pour into dry ingredients; then add apples and mix. Then turn into well greased 8 x 8 inch pan. Mix together topping to make a crumbly mixture and sprinkle on top batter. Bake in 325 degree oven approximately 25 minutes or until tester comes out clean.

Apple Crisp

Toss together and put in sprayed pan:
5 pounds apples, peeled cored and sliced
1/2 cup sugar
2 teaspoons cinnamon
Topping:
1 1/2 cup flour
3/4 cup sugar
3/4 cup brown sugar
1 teaspoon salt
1 cup oatmeal
2 sticks butter
Mix together all ingredients until butter forms into small beads. Put on top of apples.
Bake in 350 degree oven for 1 hour.
